Why sharpen my knives?

Keeping your knives sharp can greatly decrease the chance of you getting injured due to the fact that you are able to perform your cutting task in a controlled manner. Not only that, a sharp knife can also maintain ingredients' structural integrity, maintaining their freshness from the chopping board to the dinner table.

How long does it take for you to finish the job?

It depends. I used to guarantee 24 hours, but I found myself rushing the job especially a job with more than 10 knives. Unless you're giving me 20 knives, I can most likely guarantee the job will be done less than 72 hours.

What's so good about natural stones sharpening?

For the knife user, aka you, the edge of your knife is made of teeth, a lot of teeth. Natural stones create different size teeth and due to the nature of un-uniformness, it makes your edge last longer than regular whetstone.
As for the sharpener, aka myself, the feedback when you sharpen on a Japanese natural stone is unique and incomparable with any synthetic whetstones, not to mention they dish way slower than synthetic stones with similar grit range.

Do you use grinder to sharpen at all?

In short, yes. Grinders/sharpening machine has their place in sharpening.

For me, I found them the most useful when removing a lot of material, i.e thinning, repairing.
Grinders have a bad name in the sharpening community because people use them in the wrong occasion, it's not the machine that has issues, it's the operator.
