My procedure of knife sharpening is inspired by Murray Carter's 7 steps sharpening method;
1. Cleaning your knife
2. Address straightness
3. Assess the condition of your knife - thickness, rustiness, chips, broken tip etc
4. Secondary edge - Address thickness of the secondary edge(or behind the edge)
5. Primary edge - Establish a new primary edge
6. Hone - Burr removal
7. Polish - Refine the primary edge with a finer stone
